Chocolate Coconut Protein Energy Bites
A simple, nourshing snack you’ll want to keep in your fridge all week.
There’s something so satisfying about having a healthy snack at the ready when life gets busy. whether im headed into a full day of clients,squeezing in a workout, or simply looking for an afternoon pick me up, these chocolate coconut protein energy bites have become a staple in our house.
They’re made with wholesome ingredients, packed with protein and healthy fats, and just enough dark chocolate to satisfy that sweet tooth, all without feeling overly indulgent.
Ingredients:
1 cup old-fashioned rolled oats
½ cup vanilla or chocolate protein powder
½ cup natural almond butter ( or peanut butter)
1/3 cup unsweetened shredded coconut
2-3 tablespoons mini dark chocolate chips
2 tablespoons chia seeds (optional)
2 tablespoons honey or maple syrup ( also optional depending on the sweetness of the protein powder)
1 teaspoon vanilla extract
pinch of sea salt
2-4 tablespoons millk of choice (as needed to help bind)
Dircestions:
In a large bowl, combine the oats, protein powder, shredded coconut, chia seeds, chocolate chips, and sea salt
add the almond butter, vanilla extract, and honey or maple syrup
Mix until everything begins to come together. add milk one tablespoon at a time until the mixture is easy to roll without being sticky.
roll into 12-14 bite sized energy balls
refrigerate for at least 30 minutes before enjoying.

I always keep a batch in the refrigerator because they’re one of those snacks the whole family reaches for.
Tips
store in an airtight container in the refridgerator for up to one week.
Freeze for up to three months and thaw as needed
Try adding chopped pecans, walnuts,hemp hearts or sprinkle of cinnamon for a fun variation.
